The fruit was carefully hand harvested from two vineyards, one in the Dry River area of Martinborough and the other in the Gladstone sub region of Wairarapa.
It was whole bunch pressed directly to a combination of French oak 500 and 600L puncheons, and 225L barriques, where it underwent a spontaneous fermentation. Throughout its 11 months of barrel aging, the lees were stirred every three weeks, and spontaneous malolactic fermentation took place in a portion of the barrels in the spring. In February the barrels were emptied and blended under a nitrogen gas cover, before protein stabilisation and filtration. The wine was bottled in March 2021.
