The fruit for this wine came from a vineyard situated on the Martinborough terrace. The grapes were fully destemmed into a small open topped fermenter and inoculated with a cultured yeast.
The wine was pumped over once daily at the start of fermentation then plunged daily once fermentation slowed. After 12 days on skins, the wine was pressed to a stainless-steel tank for settling and then reached to French oak barriques for maturation. A spontaneous malolactic fermentation took place in the spring before the barrels were emptied under inert gas and filtered and bottled in March 2021.
