Beautifully fruited and elegantly expressed, dark plum, spiced cherry, olive and toasted nut hints of game and dark mushroom. Complex and appealing.
The fruit for this wine came from selected vineyard sites on the Martinborough terrace, as well as from the Dry River area south of Martinborough. After passing over a sorting table, some of the berries were destemmed into open top fermenters, with some fermenters retaining a portion of whole bunches averaging 30% across the blend. They were then inoculated with a cultured yeast, and the wines were pumped over twice daily with the temperature reaching on average 28ºC. After up to 30 days on skins, the wine was pressed to stainless steel tanks for 48 hrs settling, then racked to French oak barriques for aging.
Undergoing a natural malolactic fermentation in the spring, the wines were blended into tank under inert gas after 11 months barrel maturation.
Filtration and bottling took place in May 2019.
