The fruit for this wine was handpicked from two separate sites on the Martinborough terraces, and one in the Gladstone sub region.
The first parcel was whole bunch pressed and racked directly to barrel where it underwent a spontaneous fermentation. The second and third parcels were destemmed and held on skins for 8 hours to extract flavour and phenolics. They then underwent a long press cycle, and the resulting juice was settled for two days and racked to a stainless-steel tank for a cool fermentation with cultured yeasts. After four months, the two wines were blended before protein stabilisation and filtration.
