Fruit was harvested from a vineyard on the Dry River Flats south of Martinborough, then given some skin contact in the press before pressing to tank. After cold settling for 48 hours, the juice was inoculated with a cultured yeast and fermented at 14ºC for 21 days in stainless steel tanks to preserve the aromatics of the variety. The wine was aged in tank on its gross lees with weekly stirring for 3months before protein stabilisation and filtration. The wine was bottled in September 2021.
