This delicious Hawkes Bay Cabernet Merlot displays flavours of dark berry and ripe plum with a hint of subtle oak. A Bordeaux style, this playful palate of dark berry fruits with balanced acidity leads to a full bodied, lingering finish. Drinking beautifully now or with careful cellaring will mature over the next 5 years or beyond.
Each variety was kept separate during fermentation through to blending. Fruit was held cold for days to assist with the extraction of great flavour and to enhance colour stability. The wine underwent a malolactic fermentation while aging in oak and tank.
Food Pairing: Matched perfectly with Roast lamb and gratin dauphinoise.
