Our Méthode Traditionnelle wine is lovingly crafted from 100% Marlborough fruit, predominantly Chardonnay, sourced from the beautiful vineyard sites of the Awatere Valley and the Lower and Upper Wairau Valley.

These exceptional locations are carefully chosen for their ability to impart fresh acidity and intricate flavors, capturing the essence of Marlborough’s stunning landscapes.

After a gentle primary fermentation in stainless steel tanks to preserve the wine's bright fruit character, select portions are aged in barrels, adding depth and a delicate touch of richness.

Through thoughtful blending (assemblage), a small addition of sugar and yeast (tirage) brings this wine to life in the bottle, initiating a secondary fermentation that creates a fine, persistent bead.

To achieve perfect harmony, a touch of dosage softens the acidity, enhancing the wine’s vibrant fruit and elegant complexity.

This first release is a rare treasure, with only 1,800 bottles crafted, each one a celebration of sustainability and vegan-friendly practices.
