This wine started its journey from fruit hand-picked from our Arthur's Vineyard, from 3 blocks representing the 'Pommard' Clones - 5, 6 and 13.

The wine was fermented together, as wholeberries (100% destemmed) with no inoculation or adjustment. Pressed off after 18 days, then onwards to barrel maturation (all old oak) for 10 months. From barrel to tank, then bottled by hand, under natural cork. No fining, filtration, or additions.

At Carrick they believe that wine is an expression of place and time, and that the ultimate test for a winemaker is to make wines without any cosmetic refinery, i.e., no fining, no filtration, no preservative. Just grapes. The Billet-Doux is the wine which embodies this ethos and could not be possible without the care and attention of their vineyard team.
