Deliverance Waipara Chardonnay 2014
Golden straw in the glass, this Waipara Chardonnay is warm and rich. Aromas of yellow stone fruits, pastry and subtle baking spices lead into a long and inviting palate. Creamy texture is balanced by fresh natural acidity complimented by peach, pineapple and nectarine.
Gravel soils of the Waipara Valley are free draining and mineral rich. A frost free spring followed a mild dry winter leading to early flowering and rapid growth. Summer’s warm, dry temperatures encouraged fullripening of bunches by harvest, when the grapes were hand-picked for delivery to the winery.
Fully destemmed before pressing into seasoned French oak puncheons, the juice was naturally fermented and went through full malo-lactic fermentation. Maturing on full yeast lees for a year provides richness and complexity to the palate. Blended and bottled on site.
