Domaine Chevallier Chablis 2017 (France)
This wine displays a brilliant yellow-greenish colour, fruity, with white flowers, pineapple and citrus flavours. It sits well-balanced in mouth, with a nice acidity and minerality. This wine provides a good length of mouth, & is a classic, straightforward wine.
A traditional approach to vinification is practised with the Petit Chablis and Chablis fermented in stainless steel tanks and the Chablis 1° Cru fermented in oak barrels. The aim is to make crisp, classically styled Chablis wines, which highlight the distinct terroir of the region.
In 1986 Claude Chevallier, who has a passion for the wines of Chablis, revived the family tradition of wine making and established Domaine Chevallier. Wine making and cellar door are located in the small village of Montallery - tucked into the hills between Courgis and Beines. The Estate covers just 13 hectares across 3 appellations. 4 hectares in Petit Chablis, 9 hectares in Chablis and 0.3 hectares in Chablis 1° Cru. Today this small producer of hand crafted wines is very much a family run affair with daughter Celine Courty-Chevallier and her brother Tommy Chevallier running the business leaving Claude to oversee vineyards and winemaking.
