Aromas of blackcurrant and wild blackberry. flavours of ripe blackcurrant and wild blackberry with a hint of new leather. The palate is soft and fruit driven with a substantial mouthfeel with a silky texture. Highlights of black Doris plum and subtle minerality lead to a substantial and lingering finish. At its best now and will mature beautifully over the next 5 years.
Each variety was kept separate during fermentation through to blending. Fruit was held cold for days to assist with the extraction of great flavour and to enhance colour stability. The wine underwent a malolactic fermentation while aging in oak and tank.
Food Pairing: Matched perfectly with pan seared steak frites with herb butter.
