This delicious Hawke's Bay Cabernet Merlot displays flavours of ripe blackcurrant and wild blackberry with a hint of new leather. The palate is soft and fruit driven with balanced acidity and a silky fine structure. Highlights of black Doris plum and toasted coffee lift the palate to showcase a great length. Drinking beautifully now this wine can be enjoyed young or with careful cellaring will mature over the next 5 years or beyond.

Each variety was kept separate during fermentation through to blending. Fruit was held cold for days to assist with the extraction of great flavour and to enhance colour stability. The wine underwent a malolactic fermentation while aging in oak and tank. Trials of each variet took place before careful blending to create the final wine.

Food Pairing: Matched perfectly with pan-seared Filet Mignon and herb butter.
