Light golden straw colour. Aromatics of tropical guava and white florals. A textural and layered wine with melon, gooseberry & white peach flavours finishing excellently long.
A blend from two vineyards, providing well-draining alluvial soils, sandy silts offer superb drainage and river stones ensure sun heat warms the soil for tropical flavours.
The grapes were gently pressed and the juice left to settle. A 45% portion was fermented and matured in eutral French oak barrels. Wild yeasts started ferment, supported by non-GMO, organic yeast. This wine was not fined before bottling.
Food Pairing: Raw fish, white fish sliders with mayo and pickles or a melon, proscuitto and halloumi salad.
