100% Merlot which makes very typical and highly aromatic wine. This is originally from Bordeaux, but it has adjusted very well to southern France (over 68,000 hectares).
The grapes are harvested when just ripe, destemmed, crushed and fermented for 6 - 12 days. The fermentation temperature is kept below 32° C and the wine is gently pressed. The best vintages have been Maturing in tanks. Lastly, the wine is racked, filtered and bottled.
Food Pairing: Serve with white meat, poultry, grilled meat, salad and many types of cheese.
