Dark garnet. Ripe black cherry aromas enhanced with warm spices. Laden with ripe berries and dark cherry flavours that weave amongst the cocoa like structure of the wine. The palate juicy, full and concentrated leaves ripe fruit to linger on the finish.
The fruit is harvested from both their Eyrie and Falcon vineyards situated in Marlborough.
Each batch spends between four five days soaking in the tank at a cool temperature 10ºC before it is prepared for fermentation. We inoculate each batch with commercial yeast in order to have some control over the expression of the wine.
