This Hawkes Bay Merlot is plum red with layers fruit aromas of ripe black plums combined with sweet blackcurrants. The palate is generous with offerings of black plum and spiced blueberry. It is underpinned by dark chocolate notes with fine cocoa-like tannin structure.
The fruit for this wine is sourced from low cropping sites in both Marlboroughs Wairau plain and Hawkes Bay.
Cold soaked for five days prior to inoculating for fermentation. Regular hand plunging and pumpingover for a high flavour extraction before maturation in French oak barriques. Enjoy now or cellar up to 3 years. But you really don’t have to wait to enjoy this Merlot. It’s okay, you can buy another one for the cellar.
