Toasty oak with hedgerow fruits and coffee notes on the nose. Bright and fresh up front with ripe raspberries, red cherry and coco powder like structure, followed by toasted oak on the finish.
The fruit is sourced from a number of specifically chosen low cropping vineyards planted in the Southern Valleys region of Marlborough. known for it’s dark and full flavour Pinot Noir.
At our winery the harvested grapes were held cold for five days prior to fermentation for optimum flavour extraction. During the height of primary fermentation the juice is plunged by hand up to 8 times a day. The wine then completes final malolactic fermentation in the tank before being blended and prepared for bottling.
