<p> Immediately warm and appetising, this deliciously harmonious blend of two classical Bordeaux varieties showcases boysenberry fruit enveloped in soft caramel flavours, complemented with spicy leather and earthy musky violets.</p> <p> This fine wine is an appealing blend of the classic Bordeaux varieties, Merlot (53%), Malbec (45%) and a smattering of Cabernet Franc (2%). Grapes were grown in the highly acclaimed Gimblett Gravels wine growing region, and were harvested in optimum condition on 31 March 2017 at 20 Brix average.</p> <p> The grapes were gently crushed, cold soaked for two days and fermented in stainless steel tanks, with twice-daily cap management to extract colour, flavour and fine tannin structure. A post-ferment maceration followed over thirteen days. The skins were then pressed off and the wine aged for thirteen months in quality oak barrels (61% French, 37% American, and 2% Hungarian). The wine was racked once during aging and the blend was composed on 2 July 2018. The wine was lightly fined with egg-white before being bottled on 24 July 2018, under screwcap.</p> <p> Food Pairing: An excellent choice with lamb or pork dishes.
