Monowai Hawke's Bay Pinot Noir 2020
Aromas of fresh cherry, dark plum and strawberry are complimented by spicy undertones. On the palate, rich berry flavours and a delicate acidity are supported by smooth, silky tannins and savoury notes.
The fruit was selectively harvested and then gently crushed into an open top fermenter. A pre-ferment cold soak helped to extract colour and fruit flavour while daily hand plunging during ferment helped to maximise tannin extraction. Pressed to barrel for MLF and aged for 10 months in older French oak barrels. Minimal fining and filtering to protect the delicate wine. Bottled May 2022.
Food Pairing: Roast Pork with all the crackling or broccoli & cauliflower pasta with tahini sauce.
