This 2022 Gisborne Chardonnay was wild fermented in French barriques under cool, temperature controlled conditions. It then rested sur lie in the same barrels for about 12 months with occasional battonage. During this time, the wine underwent 100% malolactic conversion. The malic levels in this ripe Gisborne fruit were not high so the malolactic conversion imparts a lovely complexity rather than obvious buttery, lactic characters. After 12 months resting sur lie in barrel, it was racked into stainless steel and rested a further 6 months. It was then lightly filtered and bottled.
This has resulted in a lovely expression of Gisborne Chardonnay: fruit forward and flavoursome, with lifted citrus, floral and peaches aromas on the nose followed by a full, rich palate showing round, silky texture and well balanced acidity.
