Raspberry, red cherry and lovely floral notes combine with a touch of sweet, spicy oak to give complex and inviting aromas in this Pinot Noir. The palate is supple and concentrated and has great depth while showing lovely varietal flavours of boysenberry, blueberry, mocha and underlying, subtle savoury notes. Cellar from four to six years onwards.
The grapes are destemmed and crushed and the juice cold-soaked for about ten days to help develop the primary fruit characteristics, specifically black plum and cherry flavours. During fermentation, the cap is hand-plunged up to four times a day to extract flavour, colour and tannin. The wine is then matured in French oak barrels (25% new) for ten months, to enhance and complement more savoury, spicy flavours and then left to develop in bottle for a further six months before release.
Food Pairing: Lamb, venison, duck, pheasant, pork belly, turkey, seared tuna, hot ham, boeuf bourguignon, Coq au Vin, rare beef, dishes with rosemary and other strong herbs, mushrooms, cassoulet, beetroot, and seared spiced salmon.
