The effect of the oak is subtle, giving the wine balance, depth and structure.
Harvested on the 20th April 2021, the grapes machine-picked and destemmed to stainless red fermenters. It was on cold soak for six days before being warmed and inoculated. Post-ferment the wine was on skins for about five days before being pressed off tank and resettled, then on to barrel and through malolactic fermentation. The wine stayed in barrel for seven months before being blended, then fined with egg whites before filtering and bottling.
