Medium ruby, lighter around the rim. An intense, brooding nose of black cherry, plum, eastern spice and charcuterie; a gentle hint of forest floor and a kiss of lightly charred French Oak. Rich, velvety and full-bodied, the palate is weighty and supple, supported by tannins as fine and delicate as chiffon. The finish lingers long, revealing further layers of spiced cherry complexity. Juicy and approachable in its youth, yet wonderfully poised and balanced, all the elements of concentration, length and balance are in place to reward cellaring.
72% of the fruit from our organic vineyards Hua Nui and the Winery, the balance from the Pencarrow vineyard. The fruit is handpicked with 20% whole cluster. A period of cold soak followed by wild fermentations and gentle pumpovers and plunging. The wine is pressed to french oak barrels and left to mature for a period of 10 months during which time it undergoes malolactic fermentation to soften the wine and add complexity
Food Pairing: Lovely in its youth, this 2020 vintage shows all the hallmarks of being a classic cellar wine. Store below 15 degrees and enjoy over the next 10 to 15 years with Peking Duck, roast beef, pork belly or an eggplant & squash curry.
