Piedra Negra Alta Coleccion Mendoza Organic Malbec 2021 (Argentina)
Bright ruby color. In the nose the aromas of summer red fruits dominate with slight touches of black pepper. Concentrated palate with red fruits giving volume. It is well structured and the tannins are soft and harmonious. Long finish with notes of coffee.
The year was particularly hot and dry in Argentina with an intense spring frost which affected volumes almost everywhere but fortunately not at Piedra Negra. The harvest therefore started particularly early this year with the Pinot Gris in January to finish with the Malbecs in March and April with alcohols around 14.5% and natural pH not exceeding 3.7, 12 days ahead of 2019. This advance in the harvest date is in response to an obvious change in climate. It is a great vintage with beautiful balances.
After a cold maceration of 5 days at 10ºC, the fermentation starts with indigenous yeasts. It takes about 7 days. Once finished, the wine is separated from its skins and then goes to the press. We always privilege freshness and fruit over extraction in this line. A part of the wine is aged in two used French oak barrels.
Food Pairing: Carpaccio, Paëlla, Thin Iberico ham slices, Red Pepper stuffed with cheese.
