The Rabbit Ranch Sauvignon Blanc is a blend of Sauvignon Blanc from the winemakers vineyards in the South Island of New Zealand and the Central Otago Rabbit Ranch home block. A cool climate, elegant yet assertive style Sauvignon Blanc, left on the lees for approx 3 months to tone down some of the overt grassy, grapefruit notes and giving a lovely textural boost to the wine.
Rabbits that once overran the winemakers run holdings in the South Island have now been replaced with grapevines. In the North of the South they have replaced the endemic population of rabbits with the new epidemic in the region – Sauvignon Blanc. The fruit from these vines forms the backbone of this wine. They also have some Sauvignon Blanc planted at the original homestead in the South of the South, and this parcel of grapes has made a wild and feral impact on the wine.
