A rare and precious varietal, rediscovered and enhanced by Sella & Mosca in time, Torbato grows best in calcareous soil originating from ancient marine sedimentation. Its bunches are carefully cullled to select those which stand out for their acidity, so that the must will acquire the most desirable characteristics to produce sparkling wine. An ancient partnership, exalted by the cuvée close method, which excels in the preservation of the varietal's most intimate aromas giving the wine brilliance and freshness.
100% Torbato grapes grown in Alghero, Italy.
Grapes were soft pressed, cold settled and inoculated with selected yeast. The first fermentation was in stainless steel at controlled temperatures and the second fermentation was also in stainless steel for 20 days. The wine was aged in stainless steel for 3 months.
