Grown on stoney riverbed soils in the Waipara Valley for twelve months this dry wine has typical Waipara Valley peach and citrus characters reflecting the light riverbed shingle that it is grown in. This wine is balanced by subtle oak and creamy texture, ideally suited to richer food and sauce dishes.
the very low yielding Chardonnay harvest was picked earlier than ever before.
Fermentation was in small oak barrels as well as stainless steel using indigenous yeasts. Once the fermentation finished the wine was left to mature on full yeast lees for four months without any malolactic conversion. While in barrels and tanks the wine is constantly hand stirred keeping the yeast cells in suspension, this is done to add a creamy character to the wine that is often found in good Chardonnays. The resulting wine is medium bodied with balanced acid and fruit tannins. Rich citrus and peach flavours complement a smooth dry finish.
Food Pairing: Creamy vegetarian egg plant with bean pie or a saucy rich chicken or pork dish.
