Sourced from the Clays and gravels of the Southern valleys, the Pinot was picked at optimum ripeness from a handful of sites. Low cropping vines from a variety of older vineyards.
The fruit for this wine was hand selected across a number of vineyards. And picked for different reasons, one parcel looked stunning early and provides a lovely morello cherry note to the nose and palate, blended with some later picked blocks providing power and depth to the palate.
Food Pairing: Pork and chicken liver terrine with cornichon and tapenade. Seared rare beef and horseradish.
