"Ripe, youthful and new with aromas of vanilla and mild toasty barrel smoke, peach and baked apple with some light citrus qualities. A fine satin textures touches the palate first then flavours of grapefruit and apple, some stone fruit then flavours of wood and a touch of smoke. Pale straw colour in the glass. Lifted stonefruit and citrus aromas are complemented by a hint of toasty oak. Juicy tropical and citrus fruit offer freshness and acidity, which balances the toasty oak and nut characters that contribute to the generous weight and texture.
Some rain during flowering and a couple of chilly frosts made for a dramatic start to the growing season. It did settle though and the summer months were hot and dry, allowing the fruit to ripen and develop flavour. At the time of picking, the fruit was clean, healthy and bursting with luscious and concentrated flavours.
Harvested in the early hours of the morning, the fruit was pressed immediately. The juice was left to settle until very clean, then racked, warmed and inoculated with a combination of wild and cultured yeasts, selected to enhance texture. Some juice was transferred to barrels to develop complexity, the rest was then transferred to stainless steel tanks to preserve 'brightness'. After two months of malolactic fermentation, the tanks and barrels were topped and stirred for a further two months. In late spring, the wine was blended, fined using natural methods and bottled.
Food Pairing: With pork, lemon & thyme meatballs, pasta, crusty bread and a fresh salad.
