35-year-old un-grafted Mendoza clone Chardonnay vines, have produced a wine of intensely concentrated flavours and aromas. Un-fined juice with full solids underwent ‘wild fermentation’ in French oak barriques to create a wine of structure and complexity. This beautifully balanced Chardonnay is showing subtle aromas of toasted almond and brioche.  The palate is rich and balanced with great minerality, which is built around the ripe phenolic structure of this wine. 

This wine will reward patient cellaring. Food: Match with chicken or vegetable pasta dishes.

Thirty two year-old un-grafted Mendoza clone Chardonnay vines have produced a wine of intensely concentrated flavours and aromas. The juice from our old vine chardonnay block was settled in tank after which the clear juice was racked to barrel for fermentation, with 33% of the barrels inoculated with a selected yeast strain and remainder undergoing a more complex wild fermentation.  Following the completion of primary fermentation the wine underwent battonage or stirring fortnightly to encourage the development of minerality and complexity.  In the spring as the barrels warmed up malolactic fermentation began naturally.
