36-year-old un-grafted Mendoza clone Chardonnay vines, have produced a wine of intensely concentrated flavours and aromas. Un-fined juice with full solids underwent ‘wild fermentation’ in French oak barriques to create a wine of structure and complexity. This beautifully balanced Chardonnay is showing subtle aromas of peach, grapefruit and hazelnut. The palate is full bodied, balanced with good acidity and great minerality, which is built around the ripe phenolic structure of this wine. This wine will reward patient cellaring.
Thirty-six-year-old un-grafted Mendoza clone Chardonnay vines, have produced a wine of intensely concentrated flavours and aromas.
Pressed directly to French oak barriques and puncheons. 50% allow to start natural fermentation, the remainder inoculated with commercial yeast strains to emphasise fruit, structure and origin. Natural malolactic fermentation occurred early Summer. Blended, filtered and bottled in Autumn 2017.
