A lifted and complex bouquet of cranberry, rosehip and dark cherry is underpinned by forest berries. Hints of spice and oak add depth and complexity. Mid to full-bodied with flavours of blackberry and dark cherry. The tannins provide generous texture to create a structured and persistence wine. Enjoy now, or cellar up to 3 - 5 years.
Patience, careful crop management, and weather watching were the keys to success over the 2023 Clare Valley vintage. A wet winter was followed by cool, wet conditions through September and October, delaying budburst and slowing the normal spring growth. With flowering three weeks later than average, harvest did not begin until March. Dry and stable weather from late December through to March provided ideal ripening conditions and helped reduce disease pressure during key stages. The long ripening period gave winemakers the luxury of selecting the best parcels of fruit to deliver the elegant, well-balanced red wines with the complexity of flavours Clare Valley is known for.
Our Clare Valley Shiraz parcels were individually harvested by mid April. The fruit was destemmed and a warm fermentation followed with regular cap movement, to help extract colour and flavours from the skins. The wines were pressed off once the right balance of fruit and tannins were achieved. After aging, the wine was then blended, stabilised, and bottled.
Food Pairing: Steak with a peppercorn sauce, mushroom risotto, or Moroccan vegetable tagine. Suitable for vegetarians, vegans and a gluten free diet.
