A lifted and perfumed wine with red berry, black olive and plum flavours. Juicy fruit and a generous middle palate with star anise and cinnamon stick nuances.
When a Wild Plum tree appeared near our Cabernet and Merlot vines a few years ago, no one questioned it. Planted on a natural floodplain, the old Bleasdale vineyards share the land with native and wild fruit trees, grown from seeds that wash in from upstream. As it is with the Wild Plum tree that gives its name to this Cabernet Sauvignon Merlot blend.
De-stemmed & crushed to open fermenters, for a short soak. Fermentation peak at 30oC with pump overs up to 4 times daily. Drained & pressed after 6 to 8 days on skins. Settled for 24 hours before racking to tank and oak for MLF. Blended to tank after 12 months maturation. 9 months in seasoned French oak puncheons and hogsheads.
Food Pairing: Flame grilled porterhouse or braised beef in red wine. Served with garlic and thyme roasted mushrooms with polenta.
