The Parson Cabernet Sauvignon is our introduction to explore and enjoy this regal McLaren Vale variety. This wine displays expressive and alluring aromas of liquorice and mulberry. The wonderfully structured and eloquent palate is broodingly complexed by an array of persistent fine grain tannins.

Above average winter rainfall was followed by a cold, wet and windy spring. A dry and relatively warm February to mid-April allowed for even ripening and optimal development of flavour. The resultant wines are vibrant and fleshy with ripe, supple tannins and they promise great longevity.

Food Pairing: Medium rare steak with fresh horseradish and steamed greens.
