Complex and layered with flavours of raspberry and redcurrant brought by the grenache and accompanied by notes of zesty citrus from the Rolle. The palate develops with emerging notes of vanilla and spice from the oak influence that lingers on the finish.

We have selected the two best parcels of vines between the river Orb and the bassin de Thau, in Coteaux de Béziers appellation. There on the coastline, late ripening grape varieties (Grenache and Rolle) perform best because sea breezes limit high daytime temperatures.

The grapes are harvested in the early hours to maintain balanced acidity. They are directly pressed using a pneumatic press to avoid harsh flavors. The juices undergo cold settling for 12 days to add texture, followed by temperature-controlled fermentation at 16°C for each variety. Fifteen percent of the Grenache is oak-fermented in French oak. Finally, the wine undergoes cold stabilization before blending, filtering, and bottling.

Food Pairing: Pairs seamlessly with with meats, seafood, and goat cheese or roasted vegetable salads. Éminence rosé also complements creamy pasta dishes and light appetizers.
