Grapes from each vineyard are picked as late as possible, when the flavors start to get interesting, without becoming completely over-ripe. One parcel of fruit was given extended time on skins to impart texture and flavor. Fermentation is carried out in a mixture of stainless steel (85%) and old French barrels (15%). Wines were left on lees for 5months to build texture and complexity prior to blending.
Food Pairing: Rich pork dishes, or roast chicken and smoked salmon.
