Dark and dense purple. Bright and lifted, with layers of bay leaf, choc mint and cinnamon. The bouquet is a fantastic example of cool climate Cabernet Sauvignon. Vibrant and fresh on the palate, with flavours of redcurrant and traditional black Cabernet fruits, layered on top of very well integrated oak. The tannins are firm and fine, providing a fantastic base for the fruits to carry through for a long finish.
At the southern end of the Barossa near Mount Crawford there is a magnificent property established over 150 years ago, the entrance marked by two grand pillars - Corryton Park. One of the highest and coolest sites in the Barossa region, it provides perfect conditions for creating world class Cabernet with finesse, depth and complexity. The Corryton Park Cabernet Sauvignon is a combination of excellent fruit sourced from both the Corryton Park vineyard and specially selected complementary parcels from the Barossa Valley floor.
The 2019 vintage was one of the driest in recent years. There was below average rainfall in the winter, followed by a dry spring and summer. The conditions produced small berries, resulting in rich and concentrated wines.
Fermented in stainless-steel static fermenters with temperatures between 22-26°C. Post fermentation, the wine was transferred to 25% new French oak and 75% in 1-3 year-old hogsheads for 18 months.
