Combining an elegant, rich expressive nose with flavours of quince, ripe pear, cinnamon & clove. Finish of pink grapefruit zest & crisp minerality.
This Pinot Gris is grown on the flat block at the west of the vineyard (closest to the cellardoor), on wind blown loess and clay soils. Here we grow two Pinot Gris clones 2/15 and 2/21, orginally from Giesenheim. 2021 started with a harsh frost before a long dry summer settled in which meant clean fruit and beautiful acidity. However we were left with a nearly 70% reduction in yield. The dry autumn meant fruit ripened evenly and the concentration of flavour was very noticeable. Fruit was harvested in the cool of the early morning to retain freshness and acidity.
Picked at full ripeness when balanced between fruit and site expression, this is a drier style of Pinot Gris. Pre-pressing maceration of 5 hours at ambient temperatures, before settling for two days. Fermented mainly in tank at low temperatures through to dryness. Minimal lees stirring post-ferment allows the minerality to feature and the wild barrel fermentation adds different layers of texture and complexity. Bottled on site without fining.
