A premium modern Australian sparkling wine, emphasizing delicate but structured fruit flavours and secondary bottle fermented characters. Pale straw with greens, fine delicate bead. Buttery almond croissants underlying white stone fruit and spice. An elegant palate with red fruits, generous flavours and texture, which lead to a creamy palate structure, with brioche notes and a fine elegant acid finish.

Above average Winter rainfall set the vines up for a great growing season. Below average temperatures in Summer meant that the grapes developed excellent flavour, while the cool nights led to naturally high acid levels, perfect for sparkling.
This fruit for this wine was sourced from Adelaide Hills. The fruit has harvested in the cool of the night and was gently pressed with a cool fermentation before malolactic fermentation softened the palate and added complexity. The individual base wines were then assessed and blended and prepared for secondary fermentation. Extended maturation of up to 56 months on yeast lees to allowed for the complex and distinctive brioche and nougat characters to develop.
