The fruit for this wine was sourced from their vineyards in South Eastern Australia. The climate is hot with high evaporation rates and generally low rainfall, making irrigation essential. The climate is also continental, resulting in long sunny days and noticeably cooler nights. Long sunshine hours ensure fruit ripens fully and low relative humidity results in little incidence of disease.
The fruit was tested and tasted prior to being picked at it optimum maturing. Picking was done during the cool of the night and transported immediately to the winery. The fruit was then crushed, de-stemmed and immediately clarified. Fermentation was conducted in on French and American oak planks at cool temperatures to retain maximum fruit characters. This light use of oak has added creaminess and vanillin, giving the wine more depth, weight and complexity.
