A harmonising partner for Cabernet, the Merlot adds middle palate texture whilst also softening Cabernet’s powerful structural tannin. This traditional blend has distinctive varietal characters of plums, inky blackberries, coffee and dark chocolate with hints of violet flower and herbal spice. It is a mouth-filling wine of great length with textured soft tannins, just the way we like it!

Premium Clare Valley Cabernet Sauvignon and Merlot were fermented for a week on skins with a moderate pump-over regime, gently pressed and racked prior to French oak for ageing. After 24 months oak maturation, parcels were selected and blended to stainless steel tanks, aged in-tank for a further 24 months before being filtered and bottled. This wine is suitable for drinking anytime from the present to ten years of age, and is the perfect match for marinated slow roast lamb shoulder or most game meats.
