Aromas of red apple, pears, and spice. Flavours of baked apple, pear and ripe white peach. Generous and supple on the palate with a persistent finish. Easy to drink on its own, or to match with food.
Grapes from each vineyard are picked when the flavors start to get interesting. One parcel of fruit was given extended time on skins to impart texture and flavor. Fermentation is carried out in a mixture of stainless steel (85%) and old French barrels (15%). Wines were left on lees for 5months to build texture and complexity prior to blending.
Food Pairing: Rich pork dishes, or roast chicken and smoked salmon.
