The fruit was hand picked from a vineyard site in the south of Martinborough.

After destemming, the juice was given some skin contact time in the press, before a long and slow press cycle to maximise flavour and some phenolic extraction. After 48 hours of cold settling, the juice was racked to a stainless-steel tank where it was left to start fermentation spontaneously. Fermentation took place over a period of three weeks at an average temperature of 15ºC, and the wine was chilled to 0ºC to maintain a small amount of residual sugar for balance. The wine was then aged in tank on its yeast lees for 3 months before protein stabilisation and filtration.
