100% Primitivo grapes grown on 16 year old vines in Salento in medium-deep over layers of limestone rock.
Grapes are harvested by hand in the fourth week of August. They are fermentated with maceration at 22-24ºC for 10 days. After fermentation, the wine rests on fine lees in steel tanks for a minimum of 6 months.
Food Pairing: Great with grilled meats, game, mature cheeses.
