Sandalford Margaret River Cabernet Merlot 2020 (Australia)
- French oak
- Blackcurrant
- Wild mint
- Fine tannins
Dark garnet with youthful red hues. Bright blackcurrant pastille fruits overlay plum skin, potpurri, wild mint and bay leaf nuances. Nutmeg and cedar notes derived from French oak maturation adding to the appeal. Generous sweet fruit flavours, particularly the darker berries but also plums and rhubarb balanced with subtle savoury oak. The firm, fine grained tannin structure is well balanced providing length to this medium bodied wine. This classic Bordeaux blend will continually open up and evolve in the glass.
2020 was a vintage like no other. Whilst a global pandemic changed the way people lived their lives, Margaret River experienced a near perfect vinatge. The preceeding spring growing season was warmer than average resulting in early bud burst and grape development. Grape yeilds were lower than average which led to one of the earliest harvests on record. The near perfect growing season allowed the winemakers to harvest fruit at optimum flavour and sugar ripeness. The resulting red wines are deeply coloured and display wonderful intensity and depth of flavour as a consequence of the low fruit yeilds.
The grapes were machine harvested during the cool of night in the last week of March. The fruit was destemmed to static fermenters and then inoculated with a select yeast isolate. The ferments were on skins for 1-2 weeks with pump overs used twice daily during this period to ensure optimum extraction of colour, flavour and tannins. Based on taste, the wine was then drained and pressed to tank for malolactic fermentation. The wine was then matured in a combination of tank and seasoned French oak barrels before blending and bottling.
