The Sparkling Rosé is grown in a variety of vineyards with a range of soil types including gravels, silt and clay loam. The different characteristics of these sites provide depth and complexity of flavour in this wine.
After harvest at optimum ripeness the fruit is gently pressed, then cool fermented in stainless steel tanks. Post ferment, it is left for a short period on gross lees to develop texture and mouth-feel. A portion of Merlot is added to the final blend for vibrant colour and flavour. The wine is then blended and bottled while young and carbonated. It is this carbonation that provides the lively, refreshing bubbles.
In ancient Greece the Sileni were companions of Dionysus, the god of wine, vineyards and theatre. When there was something to be celebrated, the Sileni were always on hand to encourage enjoyment of delicious food, great wine and social interaction.
