Sourced from a beautiful single vineyard on one of the Awatere Valley’s oldest farms. Stunning rolling hills and creeks feed into a small, protected valley under the towering snow-capped Mt Tapue-o-uenuku. The soils are deep and free-draining with a loess cap, creating a perfect environment for this stunning wine.
Harvested first thing in the morning. The fruit came in cold and clean. Lightly pressed on its arrival into the winery. The juice was fermented slowly at low temperature to preserve its complex aromatics. Post ferment it spends 3 months on its ferment lees adding complexity and palate intensity.
Food Pairing: Chilli crisp pork noodles, Larb salad, Bulgogi, Fried chicken… virtually anything spicy and tasty!
