The warm, dry climate, high sunshine hours and long growing seasons in the region are perfectly suited to produce Pinot Gris with ripe flavours whilst retaining good natural acidity. Thornbury Pinot Gris has excellent richness, exhibiting vibrant florals of lychee and pears.
Fruit for this wine was sourced from the Waiata Vineyard located in the Waipara winegrowing region. Grown on the famous Glasnevin soils that are unique to this region.
The grapes were harvested over 2 days at the end of March at optimum ripeness then lightly pressed to tank. Cultured yeast strains and cool fermentation techniques in the tank have helped preserve these wines natural fruit flavours. Some residual sugar was left to balance the final blend. Post fermentation, the wine was left on yeast lees with occasional lees stirring to help build the desired texture and richness on the palate. Gentle fining and careful filtration followed before bottling.
