Waipara enjoys a warm, dry climate with high sunshine hours and a long growing season, conditions ideally suited to producing Pinot Gris with pristine fruit expression while retaining bright natural acidity.
The grapes for this wine were sourced from the Waiata Vineyard in North Canterbury's Waipara valley. The distinctive Glasnevin soils found here are particularly well suited to Pinot Gris, producing wines with intense aromatics, concentration and purity.
Following a superb growing season, the grapes were harvested in March and gently pressed to tank. Selected yeast strains and cool fermentation were used to preserve the wine’s natural fruit flavours. A small amount of residual sugar was retained to balance the final blend. After fermentation, the wine was left on its yeast lees to build texture and complexity. Gentle fining and careful filtration followed prior to bottling.
