Pale lime colour in the glass. Light florals, bees wax, ripe lime and wet stone aromas on the nose. Juicy and alluring with ripe lemon, lime and crisp minerality. Beautifully balanced, with just the right amount of acidity and natural sweetness.
Sourced from The Mound Vineyard, situated on the South side of the Waipara River with deep free-draining gravels and a light loam top soil.
Growing conditions were excellent, starting off with a frost-free Spring. Good flowering and fruit set followed, supported by warm conditions. The hot and dry North Canterbury Summer ripened the fruit exceptionally. At the time of picking, the fruit was clean, healthy and bursting with concentrated flavours.
Fruit was picked whilst vibrant and clear of disease. Press cuts were made on all parcels. Clean juice was fermented at cool temperatures to desired residual sweetness and kept lees until ready to bottle.
Food Pairing: Serve with vibrant Asian cuisine, try San choy bau.
